Introduction
Here's a delicious way to enjoy fresh rhubarb! It is always a hit at gatherings! I "retrofitted" this recipe to make it healthier than the version I'd been given by a friend a few years ago. Ingredients

1 cup white flour
1 cup whole wheat flour
1/3 cup butter
1 T cold water
1.5 cups granulated sugar
dash of salt
1/2 cup white flour
4 eggs, beaten
5 cups chopped fresh rhubarb
Directions
1. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix together the first cup of white flour and the cup of whole wheat flour, sugar, butter, and up to one tablespoon of cold water to form the crust. Press this into the bottom of a 9 x 13 inch baking dish.
2. Bake for 10 minutes in the preheated oven. While doing this, chop the rhubarb. Then whisk together the sugar, salt, remaining 1/2 cup of flour, and eggs in a large bowl. Stir in the rhubarb to coat. Spread evenly over the baked crust when it comes out of the oven.
3. Bake for another 45 minutes in the preheated oven, or until the rhubarb is tender. Cool completely before cutting into squares. (Cutting them too early is a mess! )
