Introduction

Ingredients

    1 28oz can diced tomatoes, undrained
    2 19oz cans black beans, drained and rinsed
    2 1/2 cubes McCormick's Vegetable Bouillon
    1 medium onion, chopped
    3-4 garlic cloves, crushed
    2 cups frozen green beans
    2 tsp ground cumin
    2 tsp ground ginger
    2 tsp curry powder

Directions

*I used a 4 quart (16 cup) crock pot.

Dump all veggies, beans, and spices in crock pot. Dissolve bouillon cubes in hot water. Add to pot. Add additional water until desired amount.

Cook on low for 6-8 hours.

Makes 8 two-cup servings, or 16 one-cup servings.

    This is the best soup that I have ever tasted! The broth is flavorful. Thank you, thank you, thank you!

    I used fresh black beans and vegetable broth instead of water. I did not use vegetable bouillon. I wanted to cut down on the sodium.

    This is really, really good! I also added some frozen corn just to have another vegetable in there. The curry powder, cumin, and ginger blend so well. Will definitely recommend. - 12/16/15

    O.K.
    I changed this up. Made it in the pressure cooker, with water only, no bouillion..that is soo high in sodium..sodium is a no no. when you use a pressure cooker, the foods flavor the water, no need for msg and flavorings. - 7/13/09
