Introduction
Was Hungry on my 1st day of my diet, didn't know what to eat, so invented this one from what I had in my fridge... turned out very yummy... Ingredients

1 chicken breast
10 cups collard greens
2 strips bacon
1 cup onions
1 tsp sesame oil
2 tsps chicken seasoning
2 cups cooked rice
Directions
Heat sesame oil and saute the onions on low to medium heat with lid on.
Meanwhile,in one pot cut the chicken breast in cubes and boil in little water adding half cup onions, thyme and curry and pinch of salt.
In another pot, boil the rice.
When onions become transparent, add the chopped bacon (remove the visible fat) for a couple of mins.
wash and chop collards and add to the pot with cover on.
when the collards reduce in size, add the seasoning and put back the cover.
Take the chicken and remove from water, and add to pot with collards and cover again for 5 to 7 min.
When done, Add 2 cups of rice with the collards mixture. Season accordingly and serve.
