Ingredients

    1 carton low fat cottage cheese (2 cups)
    1.5 cups fresh spinach
    2 or 3 eggs
    1.5 cups shredded cheese
    2 Tbsp flour
    thin sliced ham to line custard cups

Directions

Put the cottage cheese, spinach, eggs, cheese and flour into a food processor and mix thoroughly. Spray custard cups with PAM. Line each with a thin slice of ham. Fill custard cups with mixture and bake at 350 degrees for about 30 minutes. The custard cups should be placed in a roaster pan filled with about 1/2 inch of water. Substitute other vegetables like chopped steamed asparagus, or cooked broccoli for the spinach. Also, bacon bits can be added to the cottage cheese mix. In that case, do not line the custard cups with the ham. You can also be creative with the kind of cheese. This will fill 8 - 10 custard cups.
