Ingredients

2 can fat free cream of mushroom soup (or sub one out for cream of celery soup)
1 can water
1 can black beans, rinsed
1.5 (14 oz) cans no-salt added diced tomatoes
2 c. 90 second brown rice (not cooked)
1 package (8 oz) Morningstar Chik'n Strips Meal Starter
Taco seasoning: 1 T chili powder, 1 clove garlic, 1 t. oregano, 1 t. paprika, 1 t. crushed red pepper, 1 t. cumin, 1/2 t. pepper. (Low sodium homemade taco seasoning)
1/4 c. red onion, chopped
1 jalapeƱo pepper, chopped
*reduced fat cheddar
*cilantro
*fat free sour cream
Directions
Preheat oven to 350.
Grease 9 X13 pan.
Combine soups, water, and taco seasoning in bowl and wisk. Add rice and stir. Pour into bottom of baking dish evenly.
Place "chicken" strips on top of rice mixture.
Pour beans and tomatoes on top of chicken.
Sprinkle on cilantro and onion.
Cover with foil, bake for 90 minutes.
**Add shredded cheese and FF sour cream**
