Introduction

Sugar free whole wheat muffins. These are a GREAT low fat high fiber muffin that are super easy to make and super yummy to eat. Sugar free whole wheat muffins. These are a GREAT low fat high fiber muffin that are super easy to make and super yummy to eat.
Number of Servings: 12

Ingredients

    1 1/2 cup whole wheat flour
    1 cup oatmeal or multigrain hot cereal
    3 tsp baking powder
    1/2 cup raisins
    1 tsp cinnamon
    2-3 Tbls Splenda brand sweetner
    1 cup nonfat milk
    1/4 cup applesauce
    1 banana mashed (optional)
    1 egg
    1 tsp vanilla

Directions

Mash banana and set aside. Mix all dry ingredients together. In separate bowl, combine all wet ingredients except for bananas and raisins. Slowly mix wet mixture into dry mix. Once blended, add mashed banana's and raisins. Place into greased muffin tins and bake for 15-20 minutes or until a toothpick comes out clean.

    Good, but a little heavy, as any whole wheat muffin with no oil will be. I increased the cinnamon to 2 tea. because I like cinnamon and increased the applesauce to a whole cup. No banana. I like them and will make them again. - 9/18/11

    I came up with a cooking temp of 350 F and checked them often.At 20 mins my little knife came out clean(no t-pick).Made 10 count instead.They were still moist without banana.I really liked this recipe!I used a nonstick pan so no greasing.Came out just fine.Thanks it was my first spark baked treat - 9/3/09
