Introduction

Vegan pumpkin scones! Sweetened with stevia - good for diabetics and other low-sugar peeps! Nutritional information is for the basic recipe, but add 1/2c chocolate chips and 1/2c walnuts for some extra yumminess and they're only 177 calories! Ingredients

    2.5c White Flour
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    5 packets Stevia (the kind that equals 2 tsp sugar in sweetness, not the crazy kind that equals 1 cup of sugar)
    1 tsp ground ginger
    1 tsp cinnamon
    1/2c Unsweetened Applesauce
    1.5c Pure Canned Pumpkin

Directions

Blend dry ingredients together (use only 2c of the flour, set the other 1/2c aside), make a well in the middle and add applesauce and pumpkin. Stir until just mixed. Optional: blend in any extras now, some good suggestions are: chocolate chips, walnuts, blueberries, pitted dates, dried cranberries. Yum!

Sprinkle some of the flour onto your work surface and dump out the batter. I like to separate it into two balls and then flatten them out into a circular shape. Use the remaining flour as needed when working the dough. Don't knead too much-makes for tough goodies! Cut each disk into 6 triangles, bake in a 425 degree oven for 10-15 minutes until done. I like mine a little undercooked. Serve up with some vegan butter, or a little applesauce and a nice cup of tea or coffee!
