Introduction

Warm, comforting, fast, and delicious! Warm, comforting, fast, and delicious!
Number of Servings: 6

Ingredients

    2 cans black beans
    1 cup rice
    1 T canola
    1 can diced tomatoes (or use salsa!)
    1/2 to 1 jalapeno
    1 onion, diced
    5 cloves garlic
    2 cups water

    Spice mix: (roast, cool, grind)
    1 t cumin
    2 t coriander
    1/2 t cinnamon (or 1/2 a stick)
    1 t salt

Directions

If you're in a hurry: Plop everything into a pot, bring up to a boil, then simmer for 20 minutes (until it dries up most of the way and the rice is cooked). Then cover and let sit for 5 minutes.

If you have a few minutes:
Brown the onions over medium heat, add garlic and spice mix, cook for another minute. Add everything else. Mix. Bring up to a boil then simmer for 20 minutes (until rice is done and most of the moisture is gone), then cover for 5 minutes.

Enjoy the comforting deliciousness!

Great with:
-fresh oregano
-yogurt!!
-cheddar
-use salsa instead of the canned tomatoes

Also great to use as a stuffing for bell peppers or to make burritos.

I estimated 6 hearty portions for dinner, but I get at least 8 out of it myself- especially if I eat it with yogurt!

    This is very good. My son took leftovers next day and made a quesadilla out of it and that too was excellent, all he did was add cheese and put it in a tortilla and grilled in pan. I cheated and used Minute Rice and added rest of ingredients once the rice was cooked.

    Really tasty, nice texture. I used the "plop it all into one pot" method, but it actually took forever to cook. I plan to reduce the water, or perhaps just cook the rice separately, next time. - 5/1/12

    This was excellent. My family and I love black beans and rice; and as quick as it is to make, this recipe made it even quicker, which is just what I was looking for. I followed the recipe as is but added apple cider vinegar and oregano. I find that those two ingredients really make the meal. Thanks! - 5/18/11
