Ingredients

20 to 25 small pretzel sticks (about 1 ounce; optional)
2 packages (8 ounces each) cream cheese, at room temperature
    1/2 cup sour cream
    1/2 cup sugar
    2 eggs
2 tablespoons each tequila and orange liqueur
Juice and grated peel of 1 lime
    1 (9-inch) graham cracker crust
    Lime slices (optional)

Directions

1. Preheat oven to 350F. Place pretzels, if using, in plastic sandwich bag; close or seal bag. Coarsely crush pretzels with a rolling pin. Set aside.
2. In food processor, blend cream cheese, sour cream and sugar until very smooth. Add eggs; process until completely combined. Add tequila, liqueur, juice and peel; process until well blended. Pour into crust. Sprinkle crushed pretzels around perimeter of cheesecake. Bake 40 minutes or until center is just set. Let cool about 30 minutes. Refridgerate until thoroughly chilled. (Cheesecake will firm up as it cools.) Garnish with lime slices, if desired.
makes 8 servings
Variation: Before pouring into crust, add 8-10 drops green food coloring; process until color is evenly distributed. Or after pouring into crust, place drops of food coloring in a pattern on top of batter and swirl with the blade of a knife to create a design.
