Introduction

Simple and quick Vegetarian casserole that is relatively healthy. You can make a slightly lower calorie version by reducing the cheese or using fat free cheese and substitute butter with I Can't Believe its not Butter. You can also reduce the amount of stuffing mix used if you prefer a lighter version (i.e. only use the crumbs to cover the bottom). Simple and quick Vegetarian casserole that is relatively healthy. Ingredients

    1/2 package of Gimme Lean Sausage Style
    1 tbsp of canola oil
    2 cloves of garlic chopped
    1 tbsp of butter
    2 cups of fresh uncooked spinach
    1 cup of frozen mixed vegetables
    1/2 can of cream of asparagus soup
    1/2 cup of skim milk
    1/2 package of Stovetop Stuffing Mix
    2 cups of shredded mexican cheese

Directions

- Chop garlic and add it with oil and 1/2 package of gimme lean to a frying pan and cook until it is slightly browned
- Take 1/2 package of unprepared stuffing mix, divide into two parts
- First part sprinkle on the bottom of an 8x8 square pan or casserole dish
- Send part mix with 1/2 cup water, butter and cook in microwave for 3 mins
- Mix 1/2 cup of cheese with Gimme Lean, chopped spinach and mixed vegetables
- Spread mix over the pan
- Mix 1/2 cup of skim milk and 1/2 can of cream of asparagus and spread evenly over the pan
- Sprinkle the remaining stuffing mix over the pan
- Top with the remaining cheese
- Cook on 350 deg. F for about 15-20 mins or until the cheese begins to brown slightly
