Ingredients

    Pam or low fat cooking spray
    beef - lean cut about 3/4 pound sliced; all fat trimmed off
    1 cup chopped/sliced onions
    1 cup broccoli, chopped
    1/2 cup sliced carrots
    1 cup vegetable broth
    2 tsp worcestershire sauce
    black pepper, dash
    about 2 Tbsp cornstarch
    1/4 cup hot water
    white rice, about 4 servings - prepared according to package
    sugar, dash - optional
    crushed red pepper - dash - optional

Directions

Spray non-stick skillet with pam or lowfat cooking spray. Over medium heat, stir-fry meat until no longer pink. Add vegetables and continue cooking; stir frequently. Add vegetable broth and allow to simmer about 5 minutes. Meanwhile prepare rice according to package instructions. Dissolve cornstarch in hot water and stir it up to mix well - add to beef and vegetables and stir through. Continue stiring occasionally as sauce thickens. If sauce is slightly bitter, add a pinch of sugar and if you like things spicey, then add a pinch of crushed red pepper.
