Not only are these pleasant to look at but they are just as pleasant to eat! Not only are these pleasant to look at but they are just as pleasant to eat!
Number of Servings: 8


    4 5oz. cans of Chicken of the sea boneless skinless salmon drained
    1 med red bell pepper chopped
    1/2 cup chopped onion
    1/2 cup celery
    2 T. capers
    1 cup bread crumbs
    2 large eggs
    1/4 cup mayonaise
    2 tsp dijon mustard
    2 T. olive oil


Heat 1 T. oil in skillet and saute onion, celery, red pepper and capers and saute until tender. Set aside to cool. In a bowl combine drained salmon, bread crumbs, eggs, mayonaise, and dijon mustard, stir just to combine then add cooled vegetable mixture. Refrigerate salmon mixture for 1 hour.
Heat remaining 1 T. oil in skillet , shape salmon mixture into 8 patties, fry until golden brown and firm about 7 minutes each side.

    My fiance was used to breaded fat that his mom used to make. I cook completely different than her very healthy. I had never made salmon patties so I was a little nervous he wouldn't like them. He LOVED them, he said he didn't even miss the thick breading around them. used 16 oz fresh salmon - 5/13/11

    This sounds like a keeper. The only things I would change are using fat-free mayo and cooking them on the George Foreman Grill. - 5/20/09
