Ingredients

3/4 cup dried cranberries
1/2 cup warm water
2 cups rolled oats
1 1/2 cups whole-wheat pastry flour
2 tsp. alluminum-free baking powder
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1/2 cup maple syrup of agave nectar
1/3 cup safflower oil or olive oil
1 tsp pure vanilla extract
1/4 tsp pure almond extract (optional)
2/3 cup raw walnuts, coarsely chopped
Directions
1. In a small bowl, cover dried cranberries with warm water. Set aside for 15 minutes to rehydrate and soften.
2. Preheat oven to 375F. Line two large cookie sheets with parchment paper, or lightly oil.
3. In a medium bowl, combine oats, flour, baking powder, cinnamon ginger, and salt. Add maple syrup, oil, vanilla and almond extract and stir well to combine. Stir in dried cranberries with their water and walnuts. Stir until just combined.
4. Press cookies into one inch balls, flattening slightly with wet fingers. If you don't form them into balls, they will fall apart when baked.
5. Bake for 10 to 15 minutes, until golden brown on bottom, and slightly brown around edges.
