Introduction

Ingredients

1lb. Boneless, skinless chicken breast
2 C. Cabbage, shredded.
1/2C. Onion, chopped.
1 1/2 C. Apples, chopped (the tart ones are best).
Salt
Pepper
Garlic Powder
1 C. Sweet and Sour Sauce
1 C. Fat-free mozzarella cheese.
Whole-wheat tortillas.
Directions
Cook chicken breast with a couple of shakes of garlic, salt, and pepper until done. Cube the cooked chicken and set aside. Spray a pan with non-stick spray and saute the fruit and veggies with some more dashes of garlic and salt and pepper (to taste). When the veggies are done, add chicken and sweet & sour sauce. Cook for another minute until it's hot.
Now, spray a pre-heated griddle with Pam. Place as many tortillas as you can fit on the griddle (I can usually only do two at a time). Now place 1/2 cup of cabbage mixture on each tortilla. Sprinkle with the fat-free cheese and cap it with another tortilla. When the bottom of the first tortilla is crisp, flip it and cook until the other side is crisp. Cut into 4 triangles and serve.
A serving is an entire quesadilla.
As far as the calories, when I figured it before, it was in the 100's per tortilla and about 3g of fat. I think it depends on what kind of sweet and sour sauce and tortillas you use. You can make this less calories and it's a yummy combination (with all the food groups)!
