Raisins, 1 cup, packed
Water, 1 tsp
Kellogg's All-Bran Cereal, 2.25 cup - kellogs makes best flavor bran muffins
All-Purpose White Flour, 1.25 cup
Whole Wheat Flour, 0.5 cup
Baking Soda, 2 tsp
Salt, .5 tsp
Egg, fresh, 1 large
Egg Yolk, 1 large
Brown Sugar, .66 cup, packed
Molasses, 3 tbsp
Vanilla Extract, 1 tsp
Butter, unsalted, 6 tbsp
Yogurt, plain, whole milk, 1.75 cup (8 fl oz)
Directions
heat overn to 400 degrees
plump raisins with 1 tsp water inmicrowave for 30 seconds, let stand for 5 minutes
process half bran in food processor, whisk flours baking soda and salt, set aside. whisk egg & yolk, add sugar molasses and vanilla, addd melted butter and yogurt, and stir in processed and unprocessed cereal and leave stand 5 minutes.
Add raisins to dry ingredients, then add wet ingredients to dry ingredients and fold gently. using 1/3 cup measure or icecream scoup divide batter evenly into mufin tin cups. Mound tops, bake 16-20 minutes, cool in tin for 5 minutes before transfering to rack.
