Ingredients

2 Whole Chicken Breasts (boned and skinned)
1/2 Cup of Sliced Japaleno Peppers
1 (16 oz) can of refried beans
2 (10 oz) cans of Enchilada Sauce
1 (24 oz) jar of chunky salsa
1 (8 oz) packages of taco style cheese
1 package of flour tortillas
Directions
Cook chicken in chicken broth or water until done.
Cool chicken to touch, shred chicken, put in a large bowl.
Chop japaleno peppers with food chopper or food processor.
Add to chicken, the refried beans, japaleno peppers, 1 cup of cheese and 1 cup of salsa. Mix well.
Warm tortilla shells until pliable.
Take one can of enchilada sauce and pour into a 13x9 baking dish (I spray mine with pam)
Scoop chicken mixture onto tortilla roll up and place seam side down in a baking dish. Continue until all tortillas are filled.
Top with remaining can of enchilada sauce and salsa cover with aluminum foil. Bake covered for 40-45 minutes. Top with remaining cheese and bake until cheese is melted.
Serve with sour cream if you like (this is not in the totals)
