This is a light pasta perfect for spring and summer. This is a light pasta perfect for spring and summer.
Number of Servings: 3

Ingredients

    Whole Grain Pasta, Fusilli or Rotini variety
    2 cups chopped tomatoes (can be boiled and peeled if preferred)
    1 Tbsp Balsamic vinegar
    2 - 2.5 cups arugula
    2 Tbsp olive oil
    3/4 cup feta, crumbled
    black pepper to taste

Directions

1. Cook pasta; drain and return to pot.
2. Add chopped tomatoes, balsamic vinegar, olive oil, arugula, black pepper and feta. Stir to combine.

Makes 3-4 servings.

*For variety, add ingredients such as olives, fresh basil, roasted zucchini, or white beans or replace the arugula with spinach.
