Introduction

good on a hot day for lunch!! good on a hot day for lunch!!
Number of Servings: 6

Ingredients

    12 oz. tri color rotini
    2 cups cherry tomatoes
    1 red bell pepper, chopped
    6 baby bella mushrooms, sliced
    1 large cucumber, peeled and chopped
    1 6 oz can of pitted, small black olives
    1 cup of light italian dressing (or to taste)
    1/4-1/2 cup shredded parmesan cheese

Directions

cook pasta according to package directions.

Immediately rinse under running cold water until cooled.

Add veggies and olives, dressing and cheese, toss well and chill. I always eat some immediately.
