Ingredients

    2 TBSP Olive Oil
    2 LBS large shrimp (21 to 25 / lb), peeled and deveined
    3 TBSP unsalted butter
    4 medium cloves garlic, minced
    2 TBSP juice from 1 lemon
    1 TBSP dry vermouth
    Pinch cayenne
    salt and pepper to taste

Directions

1. Heat 12 inch skillet over high heat until hot, 2 to 3 minutes. Add 1 tablespoon oil and swirl to coat bottom of pan. Add 1 pound shrimp and cook, stirring occasionally, until just opaque, about 1 minute; transfer to medium bowl. Return pan to heat and repeat process with remaining oil and shrimp.
2. Return empty skillet to medium-low heat; melt 1 tablespoon butter. Add garlic and cook, stirring constantly, until fragrant, about 30 seconds. Off heat, add lemon juice and vermouth. Whisk in remaining 2 tablespoons butter; add cayenne, and season to taste with salt and pepper. Return shrimp and accumulated juices to skilit. Toss to combine; serve immediately.

    This came out great. I served it over whole grain thin spaghetti. I'll make it again, and next time add a little fresh parsley, or maybe basil. - 7/25/09

    calories are way off on shrimp, 2 lbs with 4 servings is not 4 oz but 8 oz making it 387 calories. I added lemon zest for stronger lemon flavor, and served over multigrain angel hair, very tasty! Next time I will add some steamed broccoli. - 1/17/15
