Introduction
We make these potatoes all the time as a side dish, when cooking on the grill. But I recentily tried this cooked in a cast iron skillet on top of the stove, they were good as well. Ingredients

3-4 Potatoes
1 or 2 Peppers, Red, Green or Yellow
Caulflower, Carrots
1 or 2 Zucchini or Summer Squash
1 Onion
1 cup Celery
1 cup chopped tomato
Olive Oil
Mrs. Dash Seasoning
Butter Buds (optional)
Directions
Use the Veggies you & your family enjoy. In a large mixing bowl, Chop all veggies into bite size pieces. (To save time, I have added the bags of alrady cut veggies from the store to my potatoes)
Lightly coat veggies with Olive Oil , season to taste with Mrs. Dash or seasoning of your choice. Butter Buds also add some great flavor without adding calories
Wrap Veggies in Heavy Duty Alum. Foil, Fold into a packet & place on the grill. The flatter the packet, the faster the veggies will cook. Check after 30 minutes & fold back packet to allow steam to escape (this will crisp the veggies a bit)
Once cooked through, it's easiest to carry from the grill to the table if you use a meat platter or large serving bowl..
