Ingredients

    1.25 lbs lean ground chicken, browned
    1 medium onion, chopped
    1 package less salt taco seasoning
    1 cup water
    1.75 cups salsa
    1 can green beans
    1 cup black beans, rinsed
    1 cup whole wheat couscous, cooked
    1 large whole wheat tortilla
    0.25 cup light cheddar cheese, shredded
    0.25 cup part-skim mozzarella, shredded

Directions

Heat oven to 350C.

Prepare couscous as directed (1/3 cup couscous + 0.5 cup water, bring to boil, take off heat and let sit for 5 min. Fluff with fork.)

Brown ground chicken (until no longer pink). Add onion to saute. Add taco seasoning, salsa, water and bring to a boil. Add green and black beans and simmer for 5 min. Add couscous and mix.

Place tortilla in bottom of square casserole dish. Scoop meat mixture into dish and top with shredded cheese.

Bake in oven for 20 minutes and then let sit for 10 min before serving.

Makes 6 servings.
