Introduction

This is a great dish if you have left over grits. I used goat cheese because it was what was on hand. This can also be made with cheddar cheese. This is a great dish if you have left over grits. I used goat cheese because it was what was on hand. This can also be made with cheddar cheese.

Ingredients

    3 cups of grits-cooked
    3 oz crumbled goat cheese
    1 package of bacon-cooked
    6 asparagus-cooked
    6 egg whites
    pepper
    garlic powder
    salt

Directions

1. cook grits according to package
2. salt and pepper to taste
3. take half of the grits and add 2 egg whites along with half of the cheese
4. season mixture with garlic powder and then add the cooked asparagus
5. cook bacon- I microwave the bacon to make it cook faster and so I do not burn it
6. crumble half of the bacon and add it to the grit mixture
7. pour the mixture into an oven safe dish
8. take the other half of the cheese and grits and add the remaining egg whites
9. spread the grit mixture over the other grit mixture in the dish
10. crumbled bacon over the top
11. cook for 60 minutes-covered- in a 350 degree oven
makes 8 servings

    Added several cloves of fresh garlic, and onions, peppers (for color) and topped w/a bit of cheddar cheese. - 4/7/20

    Very Good
    My modifications: used 4 fresh pressed garlic cloves for flavor instead of powder, and omitted 2 egg whites & 3 slices of bacon to reduce cholesterol/cals/fat. Didn't have asparagus so I used carrots and it turned out nice and fluffy. Nice side dish that I would make again! - 1/3/10
