Introduction

Falafel is one my favorite foods, but most places tend to fry it on oil. However, I came across this raw falafel recipe which you can serve moist or dehydrated. Serve in lettuce leaves with cucumbers and tomatoes with a drizzle of your favorite sauce. Falafel is one my favorite foods, but most places tend to fry it on oil. Ingredients

    2 cups sprouted chickpeas
    1/2 cup cilantro
    1/4 cup parsley
    1 TBS evoo
    1 1/2 TBS cumin
    1 tsp sea salt

Directions

In a food processor, blend chickpeas until fine. Add the remaining ingredients, and blend well. Roll mixture into small balls and place on a mesh dehydrator screen. Dehydrate at 105 degrees for 4-5 hours, longer if you desire a crispy falafel.

    Sprouted chickpeas means that they are raw so no canned or dried. They are placed in water overnight or maybe 24 hours until they sprout. If they do not sprout that means they weren't raw :) EVOO is Extra Virgin Olive Oil. - 7/31/09
