Introduction

This is a Salad that my family used to make when I was little. I never understood why a taco salad called for Russian dressing but it make all the difference to me. Number of Servings: 4

Ingredients

    Half a medium onion, approx. half cup.
    6cups Iceberg Lettuce
    1/2 cup of shredded Cheddar cheese
    1/2 cup Kidney Beans
    10 Cherry Tomatoes Halved Sauteed (raw if desired, I just don't like raw tomatoes)
    1/2 LB Lean Ground Beef
    12 Tbsp Ken's Low Cal Russian Dressing
    Salt & Pepper to taste
    Crushed Tortilla chips optional, recipe calculated with out them.

Directions

Cook beef with some salt and pepper and till cooked. Drain and rinse beef with hot water to remove all excess grease. Use same pan to cook tomatoes if desired once they are halved. Drain and rinse kidney beans. Finley dice onion. Cut Lettuce into about 1/2 inch squares. Combine all remaining ingredients and toss to coat. Always good with Ice tea on a hot summer day. Also good as a side dish when you half the portion and serve with fajitas or enchiladas. Enjoy
