Great vegetarian dish with lots of flavor! Pasta, spinach, mushrooms, onions, light-Italian style soup and Tofurky Italian Sausage. Who needs real meat?! Great vegetarian dish with lots of flavor! Ingredients

1 cup, uncooked Barilla Plus Farfalle Pasta
approx. 1 cup, Dole Baby Spinach Salad (or fresh spinach)
1 can (2 servings/can) Progresso Light Italian Soup
1 large mushroom
1/2 cup, white chopped onions
1 link, Tofurky Italian Sausage w/ sun-dried tomatoes and basil
EVOO
Directions
Serving size: Makes 3-4 1.5 cup servings
Prepare pasta first. When the pasta is almost done, start the vegetables
While the pasta is cooking, chop the Tofurky, mushroom, and onion
Brown vegetables (not including Spinach) and Tofurky in skillet lightly oiled with EVOO.
When the majority of the onions are brown, add Spinach to the same skillet.
When the Spinach begins to wilt slightly, add the soup. Make sure all the vegetables, including spinach get covered in the soup.
Add cooked pasta to skillet mixture. Continue on skillet (medium to low heat) for another few minutes, until the spinach has shrunk a bit.
Season with Italian Seasonings and then serve.
It's also great to add some sprinkled Parmesan cheese or mozzarella!
