Introduction
These are a soft cookie that stay soft even after several days. since they are made with butter though, it is recomended that you refrigerate them unless you are going to eat them within one week of baking. I'de be surprised if they lasted that long though. lol :) I will have a photo up soon. Ingredients

1 1/3c butter
2 1/4c sugar
3 eggs
2tsp vanilla
1c applesauce
6c sifted flour
1 tsp salt
2 tsp baking powder
1 tsp baking soda
2 tsp nutmeg
Directions
Pre heat oven to 375 F
In a meduim mixing bowl, sift together the flour, baking soda, baking powder, salt and nutmeg.
In the bowl of an electric mixer, (or a hand held mixer) cream butter, sugar, eggs and vanilla. Add applesauce and mix well. Add sifted dry ingredients and blend well. Drop by heaping tablespoons on a cookie stone. if you don't have a cookie stone such as one by Pampered Cheff than you can use a regular cookie sheet that has been greased. Flatten and sprinkle lightly with sugar. Bake in pre heated oven for 10-12 min at 375 F Makes 4 dozen
I cook mine in an convection oven so if you don't have one than to ensure even cooking you can turn and switch the cookie trays half way through.
