Ingredients

La Tortilla Factory low carb high fiber tortillas (4)
ground turkey
taco seasoning
1 1/2 cup onions
1 cup green pepper
1 can diced tomatoes
1 can diced green chiles
1 can mexicorn
1 can enchilada sauce
2 cups reduced fat mexican cheese blend
2 1/2 tsp cumin
Directions
pre-heat oven to 400F.
1. prepare ground turkey with taco seasoning acorging to taco seasoning instructions. Remove meat from pan and place in large mixing bowl.
2. Add onions to pan and saute 5 min. Add green pepper and cumin saute until tender.
3. Stir in tomatoes, green chilies, corn, beans, and enchilada sauce. Bring to a simmer.
4. Add veggie mix to ground turkey and mix throughly.
5. Coat a 3 qt round baking dish with nonstick spray.
6. put 1 tortilla in baking dish. Top with 1 1/2 cups filling mix, sprinkle with 1/4 cup cheese. Repeat layers.
7. Cober with foill and bake 20-25 min. Let cool 5 min before cutting into 6 pieces.
