Introduction

Dice the mango, jalapeno peppers (remove seeds, if desired) and red onion. Mince cilantro. Mix pineapple, mangos, japalenos, cilantro, red onion, and lime juice. Season with salt, to taste.

If desired, add more lime juice, depending on the sweetness of the fruit. Serve with baked tortilla chips or as a condiment for fish.

    I use 1/2 of a small can of crushed pineapple with juice and a diced roma tomato for color. Very good with fish or pork. When using with pork I will add a little garlic.
