Ingredients

1 tablespoon brown sugar
2 tablespoons honey
1/4 cup low sodium soy sauce
2 teaspoons chopped fresh ginger root
2 teaspoons chopped garlic
2 tablespoons hot sauce (optional)
salt and pepper to taste
4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 tablespoon vegetable oil
3 cups broccoli, chopped
1 1/2 cups snow peas
1 cup carrots, chopped
2 cups mushrooms, sliced
2 cups asparagus, cut into pieces
12 oz. udon noodles
Directions
1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
2. Lightly salt and pepper the chicken strips.
3. Heat oil in a large skillet over medium heat.
4. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken.
5. Simmer uncovered, 5 minutes.
6. Add broccoli, snow peas, carrots, mushrooms and asparagus. Cover and cook until vegetables are cooked, 10 to 12 minutes.
7. Add udon noodles. Gently separate the noodles and mix well with the vegetables, chicken and sauce. The noodles will soak up the sauce so be sure to mix evenly.
8. Cover and cook until noodles are heated through, about 2 minutes.
