Ingredients

    Firm White Fish Fillets - like Cod 1 fillet per person
    1 cup -grated carrots
    1 cup chopped red peppers
    1 can corn drained
    1 can black beans - rinsed and drained
    1 cup chopped tomatoes
    1/2 cup diced red onion
    1 tablespoon chili powder, garlic powder, salt & pepper
    1/2 Jalapeno Pepper (optional)
    2 cloves pressed garlic
    1 tablespoon olive oil

Directions

Season the fish with a little salt, pepper, garlic powder and a little flour. Spray a frying pan with Pam. Fry in that pan over medium heat a few minutes on each side (depending on the thickness of the fillet) untill cooked throughout. Transfer to a plate and cover to keep warm.

Add olive oil to pan until warm then add the remaining ingredients and cook over medium heat about 7 minutes.

Pour the bean misture on top of the fish and serve.
