Spicy chicken quesadilla with veggies Spicy chicken quesadilla with veggies

    1 Fat Free Tortilla
    2 tbsp Publix Spicy Black Bean Dip (any will do)
    1/8 cup Kraft 2% Natural Shredded Cheese
    1/8 cup Rotel (with or without chiles)
    Handful (recipes calculated for five) sliced white mushrooms
    1 oz shredded rotisserie chicken (white meat)
    Spray butter


Saute mushrooms in pan over med-high heat with spray butter. Lay tortilla flat and spread bean dip evenly over top. Layer tomatoes on one half, topped with shredded chicken and cheese. Top with mushrooms. Fold over. Re-spray pan with butter. Cook on one side until slightly crispy and golden brown. Spray uncooked side with butter, then flip. Cook until golden brown. Remove from heat and enjoy!
