Introduction

Number of Servings: 6
Ingredients

8 thin slices of chicken breast no skin
1 cup of onions sliced
.5 cup of red bell peppers sliced
.5 cup of orange bell peppers sliced
1 cup of can mushrooms
1 garlic clove minced
1 can of black beans
1 head of large iceberg lettuce (use all the leaves)
salt and pepper to taste
1 cup of water
canola oil spray
1 tbs of reduced fat sour cream
1 cup of mozarella cheese
Directions
1. Season the chicken breast with salt and pepper.
2. On a hot skillet spray canola oil and add the chicken breast with 1/2 cup of water, let it cook and keep adding water until chicken is done.
3. On another skillet spray canola oil add garlic, onions, peppers, and mushrooms. Sautee until done.
4. Add the veggies to the chicken and mix well.
5. Blend the black beans until smooth and cook for 5 minutes.
Put it all together:
Take one lettuce leave, add beans, chicken and sour cream and sprinkle cheese
Makes 6 serving and each serving is 3 lettuce wraps.
