Ingredients

    2 1/4 cups whole wheat elbow macaroni
    olive oil cooking spray
    1/4 cup brown rice flour
    1 cup skim milk
    85 grams low fat swiss cheese, shredded
    142 grams low fat cheddar, shredded
    1 tbsp panko breadcrumbs
    2 tbsp light parmesan cheese

Directions

Cook macaroni.
Preheat oven to 375 degrees.. Lightly spray a 8" casserole dish with non-stick spray.
Spoon flour into a bowl and whisk in enough milk to form a paste. Then add remaining milk, whisking as you do, making sure no lumps remain.
Place in a non-stick pan, over medium heat. When milk is warm add cheeses slowly bit by bit, stirring constantly. The mixture should thicken.
Stir in macaroni and transfer to the casserole dish. Top with breadcrumbs and parmesan.
Bake 15-20 minutes, or until topping is lightly browned.
Allow to stand 5 minutes before serving.

    Very Good
    I LOVE this recipe. My husband even asks for "clean" mac and cheese. I like to add veggies like peppers and cherry tomatoes; also (on a less clean day) I like to add fried onions on top. - 2/1/10
