Ingredients

    75 g (1/2 cup plus 1/8) millet flour
    70 g (7/8 cup) cocoa powder
    45 g (1/2 cup) ground flax seed
    110 g (1 cup) oat bran
    263 g (1-1/4 cups) sugar
    2 tsp. baking soda
    2 tsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    4 eggs, beaten
    2 cups cooked pumpkin
    2 T. oil
    1 tsp. vanilla
    1-1/2 cups buttermilk
    113 g (2/3 cups )Hershey's special dark chocolate chips

Directions

Preheat oven to 325. Spray 24 muffin cups with nonstick spray. In a large mixing bowl, combine all dry ingredients. In another bowl, whisk together wet ingredients. Mix wet into dry just until mixed. Stir in chocolate chips. Divide into prepared muffin cups. (they wil be full). Bake at 325 for 20-25 minutes.
