Ingredients
-
1-18.5oz box Pillsbury butter recipe cake mix with pudding in the mix
1- 11 oz can mandarin Orange segments in light syrup, drained should yeild 1 cup.
1- 10 oz of can diet Mountian Dew, drink the rest.
You will need a average Bundt pan and baking spray with flour
Directions
To Get Ready: Place your rack in the center of oven, set your oven at 350 degrees to preheat. Prepare a bundt pan by lightly coating with cooking spray or baking spray.
You may also use shortening and dust with flour.(I hate this part, so I use the spray, I also use a silicone bundt pan which means I need a cookie sheet to stabilize the pan)
Get Set: Blend the cake mix, the drained orange segments and diet Mountain Dew in a large bowl
until moistened. Beat with a mixer on medium speed for 2 minutes or by hand for 2 minutes. Pour into your prepared bundt pan, Take care to evenly spread the batter.
Bake: For 45 minutes. When toothpick inserted in the center comes out clean, your cake is done. Remove from oven and allow to cool for 10-15 minutes before removing from the pan. The pan should feel cool to the touch. Serves 12. Loosely cover to store.
Store: Cake serves 12. I cut the cake in half, then cut the half in half (4/4) and then cut each 1/4 in 3 equal portions = 12 pieces.
Wrap each left over piece and freeze, because this cake is dangerously good.
Serve with a few mandarin orange segmentson the side and a dollup of fat free cool whip...be sure you add the calories for what ever topping you choose. Enjoy
