Introduction

Quick, easy & minimal cooking. Travels well for lunch or use a smaller portion as a side dish. You can substitute your favorite flavor of hummus and grill the corn for a different flavor or change the corn to any veggie you like. Can be served warm or cold. I like room temp best. Ingredients

    1 lb. box Dreamfields pasta (rigatoni or penne)
    10 oz. Sabra hummus, roasted garlic or carmelized onion
    8 oz. pkg. Louis Kemp imitation crab, flake style, cut into 1" cubes
    1 cup canned corn, drained

Directions

In a large pot, boil water and cook pasta as directed.
When pasta is cooked, drain & return pasta to pot.
Spoon 10 oz hummus over the still hot pasta and stir to soften and combine.
Add the crab cubes and corn and combine with the pasta mixture.
Makes 8 2-cup servings
