Ingredients

1 cup peeled, cooked and lightly mashed gold sweet potato
1 egg
1/3 cup light coconut milk
2 tbs castor sugar
1 tsp vanilla essence
1/2 cup self-raising flour - sifted
Oil for pan frying
Cinnamon and icing sugar for
Directions
Beat together sweet potato, egg, coconut milk, sugar and vanilla.
Fold through sifted flour and mix to a batter.
Moderately heat frying pan. Coat with a little oil and fry spoonfuls of mixture on both sides until golden and crispy.
Repeat this process until all the mixture is used.
Dust with cinnamon and icing sugar and serve whilst warm.
