Introduction

This is my favorite way to eat dover sole. It is very flavorful, and with wild rice and a wilted romaine salad, cannot be beat.

Ingredients

    8 small to medium dover sole filets
    1 egg beaten
    2 Tbsp Olive oil
    1/2 C italian bread crumbs
    1/2 C crushed sliced almonds
    1/4 C parmesean cheese
    1 tsp italian seasoning
    1/2 tsp black pepper
    Mrs Dash to taste
    onion powder
    garlic powder

Directions

Rinse and dry fish, set aside. place sliced almonds in zip top bag and crush with a rolling pin until fine. Add bread crumbs, almonds, cheese, and seasoning together and mix. Place breading mix on a dinner plate or in a pie tin. On dinner plate or pie tin, beat one egg, season to taste. In large fry pan, heat oil on medium to medium low heat. Dredge fish in egg wash, then in breading mix. Saute 2-3 minutes on each side until golden. Serve immediately.

    Very good. I didn't have quite enough almonds to follow the recipe exactly, but it was still very good, easy and quick. Vicky - 6/24/10
