Introduction
Another Indo-American recipe coming your way! This is a healthy take on a very traditional fried Indian snack. My version can also make a great meal when accompanied by salad, rice or steamed veggies. Another Indo-American recipe coming your way! Ingredients

3 cans Starkist Chunk Light Tuna in Water (3oz)
1 medium onion, diced
1 inch piece ginger, minced
3 garlic cloves, minced
2 jalapeno peppers, seeded, finely chopped
1 large potato
1 tablespoon curry powder (garam masala can be substituted)
8 tablespoons vegetable oil
Coating:
2 large eggs
1 cup Progresso Bread Crumbs, Italian Style
Directions
Boil 1 large potato until fork tender.
When cool enough to touch, peel and mash potato delicately. (Do not want mashed potato consistency).
While cooling potato:
Heat 2 tbsp. oil in large saute pan over medium high heat
1) Fry the onion until translucent.
2) Push the onions to the sides of the pan and add ginger, garlic, jalapeno peppers in the center. Stir for 30 seconds.
3) Add curry powder into mix and stir.
4) Add drained tuna to pan. Mix well. Add salt and pepper. Cook until tuna is lightly browned.
For Coating:
1) Form an Assembly line with 2 somewhat shallow dishes. Whisk eggs into one dish. Pour Bread Crumbs into another and layout another plate for your finished croquettes.
2) To shape croquettes, roll a ball of the mix and shape into 20 half inch disks. You want the diameter to be the size of a soda can bottom.
3) Dip each disk into the beaten eggs.
4) Then roll into the bread crumbs. Make sure every part is coated.
Heat another large saute pan with the rest of the oil. Fry, turning once, until nicely golden brown.
