Ingredients

    2 eggs
    2 cups white flour
    3 tsp baking powder
    1 cup soy milk
    1/2 cup splenda
    3 tbsp sugar
    6 oz raspberries
    1/2 tsp salt
    1/2 tsp vanilla
    4 tbsp canola oil

Directions

Mix dry ingredients together, except sugar. In a seperate bowl, mix the liquid ingredients plus sugar/splenda. Add the liquid ingredients to the dry ingredients and mix until just moistened. Do not overmix. Fold in fruit. Pour into 12 cup muffin pan. Bake at 400 for 15-20 minutes. Use toothpick test to check for doneness.

    Very Good
    I substituted cherries for the raspberries and added a little orange zest for more flavor. VERY yummy. This is a great base muffin to play with and add to. Thanks! - 7/14/09
