Introduction

I was looking for a way to enjoy a wrap without the calories of a flour tortilla. This is a wonderful lunch wrap that is made with a sheet of Nori seaweed. Pile on the arugula and tomato, adding chicken and avocado as condiments, or omit chicken completely for a great vegetarian wrap. If you don't have arugula, any green leaf lettuce will do but the arugula adds a spicy bite to the wrap. I buy mine at the farmer's market. Ingredients

    1 sheet Nori seeweed
    Tomato - sliced thin, about 1/2 med. tomato
    1/4 avocado
    1/2 cup arugula
    1 oz. chicken (use as condiment, not main ingredient)

Directions

Lay out seeweed. Spread lettuce evenly, but leave about 1" of seaweed bare at one end. Add other ingredients. Roll seaweed as shown on back of package. Enjoy!
