Introduction

Ingredients

1. 3 bags baby spinach (9 oz each)
2. 3 large tomatoes, chopped
3. 1 10-oz can diced tomatoes with habanero peppers (I use Rotel)
4. 3/4 cup olive oil
5. salt to taste (2 tsp)
6. 1 tsp turmeric
7. 1 tsp garam masala
8. 1 tsp coriander powder
9. 1 tsp amchoor powder (or lemon juice)
10. 1 package Nanak Frozen Paneer (8 oz or 227 grams)
11. Optional pinch ground red pepper
12. 1/3 cup whipping cream
Directions
1. Add ingredients 1-9 in large pot on high heat for 10-15 minutes until spinach is cooked down.
2. Take pot off heat. Use immersion blender to blend spinach mixture.
3. Place pot back on heat for another 10-15 minutes. Cover pot with mesh (not lid) to prevent splattering.
4. Add paneer and simmer on low heat for 15-20 minutes or until mixture is no longer runny. If desired, add ground red pepper.
5. Add whipping cream and stir. Mixture should be smooth and creamy.
