This is a great one pan meal. This is a great one pan meal.
Number of Servings: 4

Ingredients

    1 tablespoon Olive Oil
    1 medium onion, chopped
    3 cloves of garlic, crushed
    16 oz boneless chicken breasts (4 breasts)
    1 jar (16 oz) jar Salsa (mild, medium or hot)
    1 can (10.75 oz) chicken broth
    4 oz shredded cheddar cheese

Directions

In large frying pan, saute onions and garlic in oil until onions are tender. Add chicken broth and salsa and bring to a boil. Add rice and chicken, pushing chicken under liquid. Cover, turn heat to low and simmer until rice has absorbed all the liquid (about 1/2 hour). Sprinkle with shredded cheddar cheese.
