Introduction

This is a great use of beets from the local farmers market. This is a great use of beets from the local farmers market.
Number of Servings: 4

Ingredients

    6-8 beets (any color)
    Goat cheese 3oz
    Sea Salt
    White Pepper
    Walnut Oil

Directions

makes 4 servings -salad

Preheat oven to 275 degrees. Tear sheet of aluminum foil large enough to hold all the beets together.

Wash beets and place on the sheet of foil. Add some oil, salt and pepper. Then wrap and secure all edges. Place package on a cookie sheet or in a casserole dish with a lid.

They are done when a knife can be easily inserted. When done remove and let cool slightly. Then put on gloves and rub the skin off each beet. Once all skins have been removed cut into bit size chunks and place in a bowl. Add approx 1/4C walnut oil, salt and pepper then toss. Then add pieces of the goat chesse and toss lightly.
