Introduction

This is a great recipe from "Healthy Homestyle Cooking" cookbook by Evelyn Tribole. She reduces fat & calories in this recipe and it is very tastey. Ingredients

    2 Egg Whites
    3/4 t dried basil
    2 T minced garlic
    1/2 t salt
    1/2 t dried rosemary
    1/2 t crushed red pepper
    1 medium apple, peeled, cored & finely shredded
    1/2 c shopped onions
    1/2 c fine dry seasoned bread crumbs
    1 pound ground turkey breast (lean)
    2/3 c spaghetti sauce
    2 T grated Parmesan cheese

Directions

Preheat oven to 350 deg. In large bowl, stir together egg whites, garlic, basil, salt, rosemary and red pepper. Then stir in shredded apple, onions and bread crumbs. Add turkey and mix until well combined.
Spray a 8" x 4" x 2" loaf pan with no-stick spray. Pat turkey mixture into pan. Bake for 15 min
Spread spaghetti sauce over top of turkey. Bake about 25 minutes more or until the turkey is no longer pink. Let stand for 5 minutes. Transfer to serving dish. Sprinkle with Parmesan cheese.
Makes about 4-5 servings
