You can make this quickly if you have yogurt cheese on hand. Yogurt cheese: Take a container of lowfat yogurt and drain it overnight in a coffee filter lined colander. Ingredients

    *Spinach, frozen, 1 package (10 oz) microwave on high for about 3 minutes and wring slightly to remove excess liquid
    *Athenos Reduced Fat Feta Cheese, 1 oz crumbled finely
    Yogurt, plain, low fat, 1.5 container (4 oz) A 6 oz container of lowfat yogurt made into yogurt cheese
    Fresh Chives 1 Tbsp
    Dill weed, dried, 2 tsp
    *Lemon Juice, .5 lemon (juice 1/2 a lemon)
    *Dash of Lemon Pepper (if desired) Mrs Dash would also work nicely


Directions

Microwave spinach on high for about 3 minutes, set aside to cool. when cool enough to be handled, wring excess liquid out gently (not completely dry). Combine all other ingredients, stir until thoroughly mixed together. Eat while slightly warm or allow to cool before eating.
