Ingredients

1/2 cup wheat germ
2 cups whole wheat flour, sifted
1 tsp baking soda
2 tbsp baking powder
1/4 tsp salt
1/2 cup pecan pieces
1 tsp cinnamon powder
1/4 cup ground flax seeds
1/2 cup sugar (natural cane sugar is better)
2 cups bananas, mashed or 3 medium size bananas
3 medium size eggs
1 tsp pure vanilla extract
1/2 cup apple sauce (no sugar added)
Directions
Preheat oven to 350 degrees F. Grease muffin pan and line with paper liners. In large bowl, combine all the dry ingredients except the pecan pieces. In a large separate bowl combine all the wet ingredients. Blend well. Slowly combine the dry ingredients to the wet ingredients a little at a time, blending well between additions. When both have been mixed, add the pecan pieces and mix into the batter.
Scoop batter into muffin cups. Bake 25-30 minutes or until a toothpick inserted in the muffin comes out clean. Let cool before serving.
Makes 18 medium size muffins.
