Bowtie Pasta with Tomatoe Tofu Sauce

Ingredients

24 oz uncooked bowtie pasta
2 cup Pureed tomatoes
1 lb soft tofu
2 large eggs
1 oz sundried tomatoes
1 cup salsa
garlic power - to taste
deydrated or fresh garlic - to taste
herbs, oregano, basil etc - to taste
Directions
Cook bowtie pasta al dente and set aside.
In another pot, combine pureed tomatoes, 1/3 lb tofu (pureed), sundried tomatoes, garlic powder, fresh or dehydrated garlic, and salsa. Set on low to simmer. (also add fresh herbs to taste, I like oregano and basil)
In a blender, blend remaining tofu, add 2 eggs and garlic powder and blend till well mixed.
Add tomatoe sauce to pasta and mix well. In a 9X12 baking dish, place half of pasta, then a layer of the tofu and egg, then top with rest of pasta.
Bake in oven for 45 minutes (covered in foil). Take out of oven and let stand for 5 minutes before serving.
Serve with salad, crusty whole wheat roll for a complete filling meal. (optional: offer parmesan or romano grated cheese for sprinkling on top)
