Introduction

An excellent way to use up old bananas for a healthy breakfast or snack. An excellent way to use up old bananas for a healthy breakfast or snack.
Number of Servings: 6

Ingredients

    2 Bananas
    1 Egg
    2 Tsp Baking Powder
    1 Cup Flour
    1 Tbs Cinnamon
    3 Tsp Ground Ginger

Directions

1) Mash the bananas

2) Beat egg and stir into banana mixture.

) Stir in flour, baking powder, cinnamon and ginger.

4) Beat until smooth consistency.

5) Pour into large muffin papers.

6) Baked for 20 minutes.

7) Sprinkle with cinnamon or ginger if desired.

Makes 6 large muffins. Serve with fresh fruit for breakfast or eat alone as a super snack.
