Ingredients

    3 egg whites
    1/2 c. canola oil
    1 med. banana, smashed
    1 c. sugar
    2 c. shredded zucchini
    1/2 t. salt
    1 t. baking soda
    1 T cinnamon
    1T vanilla
    2 3/4 c. whole wheat flour

Directions

combine all ingredients together. fill 34 reg. lined muffin tins 3/4 full. bake at 325 for 20-25 minutes.
